Wattle Creek Winery Wattle Creek WineryHistory Christopher and Kristine Williams were busy raising their family in Arizona when they received a call from a Sonoma County friend that would change their lives. A rare opportunity to purchase an Alexander Valley vineyard had presented itself and the Williams quickly boarded a plane to California in 1994 to view the property. They were captivated with the beauty of the area and the special nature of the hillside property which is bordered by the famed Russian River. Within a day they made the decision to purchase the magical 56 acres that later became Wattle Creek Winery. Family and dogs in tow, they relocated permanently to California in 2001 and dedicated themselves to making wine that they and their friends would enjoy. The fifty acre ranch has 26 acres nestled into the Asti Foothills at the northern tip of Alexander Valley. Most of the hillside vineyard sits about 400 feet above sea level where we have planted Cabernet Sauvignon (Clone 7, 337), Merlot (Clone 3), Malbec, and Petite Verdot. We also have ten acres of Chardonnay within the deep alluvial floor of Alexander Valley. We have both the warm days for intensity, and cool nights for acidity. The hillsides give us layers of complexity that are tailor-made for constructing a "food wine".Pairing food with wine is what Icaria Cabernet is all about. We did not spend three years of our time to make some overdone fruit bomb. Our Cabernet is based on elegance and subtlety, and the best thing is that it's only three years old. About Miro Born and raised in northern Bulgaria, a region with many millennia of winemaking history, Miro (Miroslav) Tcholakov was exposed to wine and winemaking at a very early age. His grandfather had long made the family supply of wine. As a boy, Miro was at his side during all phases of the process. After completing his mandatory military service, he attended the Higher Institute of Agriculture in Plovdiv where he studied viticulture and enology. Soon after graduation, in the summer of 1990, he was chosen from hundreds of candidates to participate in an international exchange program in agriculture set up by The Future Farmers of America. After a few months in Napa, he was taken on as harvest intern at Sonoma County's Dry Creek Vineyard. What was supposed to be a temporary harvest job turned into a nine-year position moving through the ranks from Cellar Master to Assistant Winemaker in 1997. In 1998 Miro went to work as Winemaker for Trentadue Winery , which is still his "day job." In addition to bringing more acclaim to the winery by creating world class award-winning wines, Miro's duties include overseeing many custom crush operations for some renowned winemaker clients. In 2001, Miro became his own customer with his inaugural bottling of his Petite Sirah. Within a few weeks of its release, it received a fat 90 points and a "well-endowed" write-up from Robert Parker, Jr. in the Wine Advocate. 2007 Cabernet SauvignonSorry, this wine is sold out. THE CONCEPT: To create a Cab that is elegant and enjoyable with food and also age worthy. Vineyard : Prime, hill side Alexander Valley Vineyard owned by Dr. Siegemund and biodynamically grown with minimal irrigation and fertilizing. The location is just South of Cloverdale. The entire vineyard is only 5 acres on five different blocks. Close spacing, Southeastern exposure. Soils: The soils are with high mineral content-decomposed blue rocks and granite, shallow and with low fertility. The Vintage: 2007 is shaping up as one the best so far in this decade. The weather was nearly perfect without excessive heat allowing the grapes to “hang” on the vines and mature without any stress. The fruit set was very well balanced as well, matching the vine's potential to perfectly ripen the grapes. Winemaking: The grapes were harvested in the early morning of October 10th. After hand sorting, the grapes were crushed with 30% whole berries. The lot was only three tons so I used the smallest tank available. After three days of cold soak yeast was introduced and the wine was free run only drained at dryness. The wine was aged in 50 % new European oak barrels for twenty two months and racked barrel to barrel four times using nitrogen only. Winemaker's description: The grapes were harvested mature at only 23.5 Brix sugar-a rare for California due to very poor soils and low vine vigor. The wine is focused and concentrated with considerable tannins assuring longevity for at least 10 years. The evolution of Zin in my opinion is toward balance instead of power, terroir expression instead of the sameness of modern winemaking; elegance instead of brute force. Vineyard: The vineyard is located behind Fitch Mountain in Healdsburg on the banks of the Russian River where two great appellations-Alexander and Russian River Valleys overlap. This 80 year old dry-farmed vineyard is a part of a historic property owned by the Passalacqua/Seghesio families and currently used for their Old Vines blend. The microclimate there is much cooler than Alexander Valley, but warmer than the greater Russian River. Soils: Predominantly well-drained sandy/gravelly loam, with relatively low fertility—perfect for head pruned Zins and Petites. The Vintage: 2007 is shaping up as one the best so far in this decade. The weather was nearly perfect without excessive heat allowing the grapes to “hang” on the wines and mature without any stress. The fruit set was very well balanced as well, matching the vines potential to perfectly ripen the grapes. Winemaking: The grapes were harvested on September 7th at (modest for Zin) 24.5 Brix sugar. The acid and pH were spot on without the need for any corrections. Wine Data: 2007 Petite SirahSorry, this wine is sold out. THE CONCEPT: I made my first Petite Sirah 19 years ago and I'm still in love with the grape. Petite is truly an American variety—powerful, bold and unrestrained in its capability, and yet it needs a gentle winemaking approach to unveil its true identity. Order this wine online. Vineyard: Dry Creek Valley has a long established reputation for growing outstanding Zin and Petite Sirah. The grapes are from two distinctly different vineyards—one on the valley floor a few feet from Dry Creek and the other from a beautiful hill side vineyard surrounded by towering Redwoods. Soil: The valley floor is comprised of predominantly deep gravelly-sandy and Cortina type soils (fertile) whereas the hill side is made of mostly low fertility, brick red clay (Manzanita) type soil. Both type soils produce wines with relatively low pH and firm structure. The Vintage: 2007 is shaping up as one of the best so far in the decade. The weather was nearly perfect without the excessive heat allowing the grapes to "hang" on the vines and mature without any stress. The fruit set was very well balanced as well matching the vines potential to perfectly ripen the fruit. Winemaking: The grapes were harvested early on the morning of October 8th, 2007 at an average of 25 Brix and total of 3 tons. The fruit was hand sorted and destemmed for whole berry fermentation in small open top tanks by gently punching down the cap by hand. Three specific strains of yeast were used to compliment the character of Petite Sirah. Post-fermentation, the must was pressed directly without the use of pumps for gentle extraction. Only the free run wine was collected. The malolactic fermentation was completed in 40% new European oak barrels. The wines were aged for 17 months before bottling. Winemaker's description: The quickest way to describe this wine is “dark and delicious.” Loads of blackberry, blueberry and dark cherries are enveloped in toasty oak aromas of cocoa powder, vanilla and a touch of graphite. On the mouth the wine is big, rich and extracted but with remarkably civilized tannins for this variety. Wine Data: Appellation: Dry Creek 2007 Cuvée SashaSorry! This wine is sold out. THE CONCEPT: My goal was to create a distinctive, yet accessible GSM (Grenache, Syrah, Mourvedre) blend. I've always had a special preference for the great wines of Southern France and with this inaugural release I'm offering my California version of this style. Vineyard: The grapes are grown on Montelago Vineyard planted between 2000 and 2400 feet elevation above the largest lake in California—Clearlake. This gorgeous vineyard has a sun-rich south facing exposure. The soil is brick red volcanic cinders and pumice-like gravel and stones. In general, low fertility with high level of calcium and potassium. The Vintage: 2006 had lower yields than the record breaking, abundant 2005. The low crop levels usually produce wines of increased ?avor intensity and overall concentration. High Valley does not get the morning fog as the coastal valleys do, but is classi?ed between Region 3 and Region 2 (very similar to Sonoma and Napa) for its summation of temperatures during the growing season. Abundant sunshine and wind create conditions very similar to the Mediterranean climate. Winemaking: Grenache was the ?rst to ripen on September 30, followed by the Syrah and lastly the Mourvedre at the end of October. All lots were picked very early in the morning at temperatures near 40°F in small containers to prevent the grapes from bruising and oxidation. The fruit was gently destemmed and sorted by hand for whole berry fermentation. The wine was fermented in small tanks and gently punched down by hand. Then the tanks were directly pressed without the use of pumps for gentle extraction and only the free run juice was collected. Following malolactic fermentation, the wines were aged separately for 12 months and for an additional 4 months after blending. Winemaker's description: The wine is seductively inviting with a nose of jammy strawberries, plums, hint of apricots, dry rose petals and exotic spices.
